What better way to start the day than with a healthy and delicious breakfast in the comfort of your own home. Now, that it is getting colder outside--bundle up, watch some Sunday football and start the day out right with some fun in the kitchen. These pancakes are sure to please anyone and everyone. Do you love fruity pancakes but have a craving for chocolate? Simply, make them both and enjoy these pancakes two ways!
Makes 10 pancakes
Homemade Pancake Mix
- 2 cups of organic white whole-wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon sea salt
- 2 tablespoons pearl sugar (may use organic cane sugar)
- 1 cup of apple sauce
- 1 ½ cups of almond milk (more to thin if necessary)
- 1 tablespoon vanilla extract
- 1 bag of organic frozen mixed berries, thawed and brought to room temperature
- ½ cup of organic chocolate chips
- Organic maple syrup
Homemade Whipping Cream:
- ½ cup of organic whipping cream
- 1 teaspoon vanilla extract
Combine all pancake ingredients in a large bowl and mix well. In another large bowl combine whipping cream and vanilla extract and beat with a handheld mixture until cream forms stiff peaks. Add to a bowl, cover with plastic wrap and place in the refrigerator.
Heat a large skillet or griddle on medium heat. Grease surface with Nutiva Organic Virgin Coconut Oil or spray with organic extra virgin olive oil cooking spray.
Drop large spoonful of batter on hot skillet or griddle. Cook for 1 minute and flip with a spatula. Continue cooking for another 1 minute or until cooked through. Once pancakes are cooked through transfer to a plate to cool.
For chocolate chip pancakes add a tablespoon of dark chocolate chips to batter before flipping.
Top plain pancakes with homemade whipped cream and mixed berries. Top chocolate chip pancakes with homemade whipped cream and organic maple syrup. Eat immediately!
